Easy Weeknight Instant Pot Meals

How often have you wondered what the next meal should be and cannot decide?

Whether you are looking for easy Vegetarian meal or a quick fix for the lunchbox, this collection of easy Instant Pot meals will have you covered. 

Whenever I am looking for a quick meal using the ingredients I have in my refrigerator and pantry, I tend to end up with Instant Pot meals. 

They can be customized based on preferences, need no baby sitting and are cooked on time so no need to keep checking. Just set the Instant Pot to cook and head to your next task.

Here I am sharing some of our favorite weeknight meals. These are on repeat week after week and we LOVE them. 


1- 30-Minute Vegetable Biryani

Ready in under 30 minutes, this Instant Pot Vegetable Biryani is flavorful, delicious and easy to make. 

A mix of vegetables, basmati rice and Indian spices; this one is a keeper!

A SUPER popular Indian recipe, Pav Bhaji is a vegetarian Sloppy Joe made with vegetables and spices. 

Served with butter toasted pav and chopped onions, this is a favorite for weeknight dinner. Make it in advance if you like, it stays well for a couple of days when refrigerated.

This Instant Pot version needs no boiling and makes the shells perfectly in under an hour. Love this recipe for weeknight dinner.

Instant Pot Miso Ramen Soup

Full of Umami flavors from the miso paste and a mix of colorful vegetables, this ramen soup is super comforting. It is perfect for Vegetarians and Vegans and can be modified to include meat.

What is Ramen Soup?

A Japanese noodle soup, Ramen soup uses soy sauce or miso as base for a distinct flavor. This soup has vegetables, tofu, proteins etc added for taste and texture. 

Generally served as a meal, this soup is filling and full of delicious elements. Wheat noodles or ramen noodles are the base of the soup along with a flavorful broth. 

To make the soup vegetarian, I have used miso with vegetable broth. Together, they create an Umami base for the soup. 

If you have tried this soup at restaurants, you would recall how flavorful the meal is. The same is replicated in this home made veggie version of the classic.

This Miso Ramen Soup

  • is Vegetarian and Vegan friendly

  • comes together in just one pot

  • is best enjoyed fresh after preparing. This recipe does not work well for meal prep.

  • is a great weeknight meal

This soup os made in the Instant Pot. While the same recipe can be made using a pan, I like to use the Instant Pot as it is hands free and I can even schedule the broth to cook and simmer if I am away from the kitchen. 

Once the broth is ready, all you need to do is add in the vegetables, tofu and ramen noodles. The recipe comes together quickly and is super versatile. 

What is Miso?

A fermented soy bean and salt mix with koji, Miso is an essential ingredient in Japanese recipes. It is a healthy ingredient full of nutrients. 

Available in different forms like white (shiromiso), red (akamiso) and mixed (awasemiso), this fermented soy bean and koji mix is popular in so many recipes. Red and white are the most popular and this recipe uses white miso.

Generally sold as a container, I have used Hikari Organic White Miso Paste in this recipe. It is gluten free and adds so much depth to the broth.

Ingredients to make this soup

Instant Pot Ramen Soup Ingredients


The soup requires a handful of ingredients. Sauces like soy and chili are used in the recipe. Apart from that here is what you need: 

Miso Paste: A key ingredient in the broth, Miso is a fermented paste used in Japanese cooking. 

Vegetable Broth: As it is a soup recipe, we need some liquid. I like to use broth but water works too. Any broth cube mixed with water or canned broth can be used here. 

Ramen Noodles: Thin wheat noodles are the best in this recipe. I like to use these noodles. They have just three ingredients and work well for all kind of ramen soups. 

Tofu: The best way to add protein in the recipe is using tofu. Extra firm or firm tofu can be used as is or after air frying. I have used it without frying so that it absorbs all the broth and becomes very flavorful.

Aromatics: Green onions, garlic and ginger are used here. They add a lot of spice and flavor to the soup. They are great with all the vegetables used in the recipe. 

Vegetables: A mix of vegetables are used in the soup. I like to add carrots, mushrooms, broccoli and bok choy to the soup. They add so much color and texture to the soup.

Cut the vegetables in different shapes to make the soup interesting! Add some more vegetables if you like.

Step by Step Instructions to make

1- Heat sesame oil in the Instant Pot set on sauté mode. 

2- Once it is hot, add minced garlic, grated ginger and onions. Sauté for a couple of minutes. 

3- Add mushrooms and sauté for a minute.

4- Pour in the vegetable broth or water. Mix well. 

5- Close the lid and change the mode to pressure cook. Let the broth cook on high for 3 minutes.

6- Once the cooking cycle is complete, release the pressure and open the lid. 

7- Add in carrots, bok choy and broccoli. Let them boil for a couple of minutes. 

8- Add in the tofu and mix well.

9- Place the ramen cakes in the soup. 

10- Add in miso paste, soy sauce and chili sauce. Mix well.

11- Turn off the instant pot. Serve the soup topped with some green onions and cilantro.

Tips and Notes

  • The miso paste and soy sauce are both high in salt. Add additional salt only if required.

  • Add the miso paste towards the end of the recipe. Cooking the paste deteriorates its health benefits. 

  • Add more vegetables and protein if you like. If using hardy vegetables, cook them with the broth else add them after boiling.

  • This soup is enjoyed best straight after cooking. The noodles tend to soak up the broth and disintegrate if left for a long time.

Ingredients

  • Firm Tofu 7 oz, pressed and cut into cubes
  • Broccoli 1/2 cup, cut into florets
  • Carrots 1/2 cup, cut into slices
  • Mushrooms 6-7, cut into half
  • Bok Choy 8-10 leaves
  • Green onion 2-3 stalk, cut into pieces
  • Ginger 1 inch piece, grated
  • Garlic 3 cloves, minced 
  • Ramen Noodles 2 cakes
  • Vegetable Broth 2 cups
  • Water 1 1/2 cup
  • Miso Paste 2 tbsp
  • Red Chili Sauce 1/4 tsp
  • Soy Sauce 1/2 tsp
  • Sesame Oil 1 tbsp
  • Green Onion and cilantro to top

Instructions

Air Fryer Masala Smashed Potatoes

Using the Instant Pot and the Air Fryer makes the recipe in a jiffy and is super easy too. This is now my FAVORITE way to make any kind of smashed potatoes for sure.

What are Smashed Potatoes

Don't worry about the name; no potatoes are ever harmed in this recipe!

Smashed potatoes are essentially twice cooked potatoes with some spice and flavoring. Mini potatoes make the recipe easily as they do not need to be chopped. 

The potatoes are boiled in the Instant Pot first, then smashed with a potato masher and spiced. Finally they are air fried till crisp and cooked well. 

These potatoes can be enjoyed as a snack or be used with Indian style peas (ragda) for an easy 'LAZY ragda pattice'. 

Smashed potatoes are popular in many cuisines, this version has Indian spices to flavor them and add some zing top boring spuds.

This recipe of Smashed Potatoes

The recipe can be made before hand and served after heating. 

If making for more people, it is best to boil the potatoes before hand and just air fry them before serving.

If you are in a rush, make them and store them in an air tight container once cooled. Air fry for a couple minutes before serving.

I use these potatoes in place of any recipe that calls for tikkis. From chaat to ragda pattice, these work easily and perfectly. Super easy to scale and easy to customize for kids and adults.

Ingredients to make Smashed Potatoes

The recipe needs a handful of ingredients. They can easily be modified according to taste and availability.

Baby Potatoes: Commonly used for any smashed potato recipe, yellow potatoes work the best here. Try and use potatoes of similar size to ensure they cook in the same time.

Aromatics: Garlic, ginger and jalapeño are used here for flavor and spice. Skip the jalapeño if you like a milder version.

They can be processed in a food processor or grated using a microplane. Keep the garlic in slightly bigger chunks if you like roasted garlic.

Spices: A mix of Indian spices i.e. red chili powder, turmeric powder and garam masala are used here. Make your own garam masala or use store bought one. Both work equally well.

Apart from these, oil and salt are required. Any neutral oil is great for the recipe. Butter can be used if you like too.

Step by Step Instructions

Wash and clean the potatoes thoroughly. 

1- Add 1 cup water in the instant pot. Place a steamer rack on a raised rack and arrange the potatoes on it.

2- Close the lid and set mode to 'Pressure cook' and time to 5 minutes. 

3- Once cooked, let the pressure release naturally for 5 minutes and open the lid on releasing the remaining pressure.

4- In a bowl mix together oil, turmeric powder, red chili powder, salt, garam masala, jalapeño, garlic and ginger.

5- Drain and remove the potatoes on a plate. Lightly mash them using a potato smasher or a glass.

6- Drizzle the flavored oil on the potatoes.

7- Preheat the air fryer to 400 F for a few minutes.

8- Place the potatoes in a single layer (I placed half of them) and air fry for 10 minutes. If you like them super crispy, air fry for another 5 minutes.

9- Remove the potatoes and serve topped with some chaat masala and sliced onions.

Tips and Notes

  • Make sure the potatoes are cleaned thoroughly as we consume the skins too.

  • Skip or reduce the jalapeño for a milder version of the recipe.

  • The thinner the potatoes are smashed, the crispier they get. But make sure they do not break apart while smashing.

  • Air Fry the potatoes in batches, making sure they do not overlap or touch each other.
