If you have been to the Key West, I am sure you can completely relate to this post. This recipe of Key Lime Pie is very similar to the lime pie you would enjoy all around the Keys. The original version is actually a baked pie, but lately we get a no baked version, a low fat version, a single serve version and so on! Before visiting the islands, my idea of pie was either a savory pie or a sinful chocolate pie. Only after my first trip there, I started loving Lime Pies and now this no bake version has become my favorite!
This pie uses just four ingredients and can be made in under ten minutes! If you have the pie crust ready, you can actually prepare the pie even after the guests have arrived! I used a ready Graham crust that was 9 inches. For that, I needed a cup of whipped cream to start with. If you are making individual serve size or a bigger pie crust, adjust the quantity of cream and sugar.
To make things simple and neat (it is not 100% perfect), I used a flat spatula to cream the pie. Orblue has a nice set of three steel spatulas; 6 inch, 8 inch and 10 inch blades. The spatulas are perfectly sharp and work great to pick up cream and then spread it evenly on cakes and pies. The plastic handle is sturdy and easy to hold. Plus, the spatulas are dishwasher safe, making cleaning pretty simple. I used the spatula to flatten the top and I am sure I will get better with the texture after working more often on it :)
9 inch pie crust ( home-made or store bought)
Heavy whipping cream 1 cup
Sugar 1/2 cup
Key Limes 4-5
Add whipping cream in a bowl and start whipping it till you get soft peaks. Then add the sugar and juice of 4 limes. Also, add the zest of 2 limes and whip to get hard peaks.
Now, reserve about 1/4 cup of the whipped cream and transfer the rest onto the pie crust. Do not remove the crust from its cover. I did that for the first crust I used, and in a couple of minutes, the entire crust just crumbled away! I had to rush and get a new one immediately.
Spread the cream well using a flat spatula (I used this one). Spread it evenly on the crust. Using a star nozzle and a piping bag or bottle, use the remaining cream to make a border and some more decoration. Zest a lime on the surface and decorate using a lime slice.
Chill for an hour or so and serve.
